She has a cookbook too that is phenomenal and I'd be honored to let you borrow it! One of our favorites is chicken taco meat. SO easy. <br><br>2 or 3 chicken breasts (thawed or frozen)<br>1/2 pkg taco seasoning (you could do the whole if you like the flavor a lot.)<br>1 can rotel<br>1/2 to whole cup (depending on amount of chicken) of chicken broth. <br><br>Cook on low 6-8 hours or high 4-6. Just until chicken is done. Then shred and fill tortillas or shells!<br><br>I also make this into a soup by adding black beans, frozen corn, and more chicken broth.
